- 1 large white potato
- 2 grated boiled eggs
- 2 portions of cod
- 1 portion of salmon
- 1 chopped onion
- 1 chopped spring onion
- A handful of chopped parsley
- 2 tbsp plain flour
- 500ml milk
- Salt and pepper
- (Optional) frozen peas
Method:
- Cut the potatoes into chunks, cook until tender, then mash.
- Sauté the onion and spring onion in a little butter until softened.
- Add the flour and cook for a minute, stirring constantly.
- Gradually add the milk, stirring until the sauce thickens.
- Add the fish and, as it starts to cook, use a spoon to break it into chunks.
- Stir in the grated boiled eggs and chopped parsley. Adding a few frozen peas at this point is a nice touch.
- Season with plenty of black pepper and a little salt, if desired.
- Spoon the mixture into a baking dish and leave to cool slightly.
- Carefully spread the mashed potato on top.
- Bake in the oven until bubbling and golden brown. Use the grill to crisp up the potato topping for a delicious finish.
