Ingredients
Fresh Prawns – about 12 large ones
Soft tacos
A small chunk of red cabbage
A small chunk of white cabbage
1 apple
1 carrot
Greek yoghurt / crème fraîche
A little hot sauce, if desired
A good squeeze of lemon juice
Method
Peel the fresh prawns—or if they’re already peeled, even better!
Thinly slice both cabbages, grate the apple and carrot, and combine everything with the yoghurt and/or crème fraîche—half and half works well. Add a good squeeze of lemon juice.
Lay out a taco, place a generous amount of the coleslaw mix on top, and add a prawn or two.
