Packed with lean protein from cod, fibre-rich beans, and energy-boosting potatoes, this soup is a fantastic choice to keep you feeling satisfied and fuelled. Simple, tasty, and full of essential nutrients, it’s the perfect meal to brighten up your day!
Ingredients
🔸 1 leek, chopped
🔸 1 onion, chopped
🔸 A little butter (for sautéing)
🔸 2 tbsp plain flour
🔸 2 portions of cod (skinless and boneless)
🔸 1 cooked potato, cut into chunks 🥔
🔸 A few spoonfuls of white beans 🫘
🔸 500ml milk 🥛
🔸 Chopped parsley 🌿
🔸 Salt and pepper to taste 🧂
Method
1️⃣ Sauté the chopped leek and onion in a little butter over medium heat.
2️⃣ Stir in the flour and cook for another minute, stirring constantly.
3️⃣ Gradually add the milk, stirring continuously until the sauce thickens.
4️⃣ Add the cod and let it gently cook for a few minutes, then break it into chunks with a spoon.
5️⃣ Stir in the cooked potato, white beans, and parsley.
6️⃣ Season to taste with salt and pepper.
