Cauliflower Rice (side)
Ingredients
- 300g Cauliflower rice. (see below for recipe)
- 1 small head of cauliflower, chopped coarsely
- 1 small onion, chopped finely
- 2 tbsp. butter
1-2 tbsp. coconut oil/rapeseed oil - Pepper
Method
- After chopping up the cauliflower put the pieces into a food processor, pulse the contents until reduced to the size of couscous or rice grains.
- Sauté the onions in the melted butter and coconut oil over medium heat until they were translucent.
- When the onions have softened, add in the cauliflower and stirred everything around to evenly distribute the fat and onions.
- Cover the pan/wok and cook the cauliflower for 5-10 minutes until softened. Add pepper to taste.
