Cook with Zena Prawn Cakes

Serves 3

Ingredients: 

  • 200g raw Prawns (peeled)
  • 2/3 Spring Onions
  • 1 Egg White
  • 1 tablespoon Cornflour
  • 100g Panko Breadcrumbs
  • Lemon

Method:

  1. Blend the prawns and spring onions together.
  2. Add the egg white and cornflour and mix well.
  3. Season with a little salt.
  4. Make into individual patties.
  5. Coat in breadcrumbs.
  6. Chill in the fridge for minimum of 15 minutes.
  7. Shallow fry until golden brown and place in a hot oven (200c) for approx. 10/15mins.
  8. Serve with lemon wedges.
