Salmon & Avocado Power Butty
Ingredients:
- 2 slices of grain and seeded bread
- 1 small piece of salmon, thinly sliced
- A little plain flour, seasoned with salt and pepper
- 1 ripe avocado
- Juice of half a lemon or lime
- ¼ green pepper, finely diced
- 2–3 spoonfuls of plain yogurt
- Fresh basil and chives, chopped
- Salt and pepper to taste
Method:
- Lightly coat the salmon in the seasoned flour and pan-fry in a small amount of oil until golden and cooked through.
- In a bowl, mash the avocado and mix in the green pepper, yogurt, lemon or lime juice, and herbs. Season to taste.
- Spread the avocado mixture generously onto one slice of bread, then place the cooked salmon on top.
- Add the second slice of bread, press gently, and cut in half.
- Serve and enjoy!
