Recipe

Salmon & Avocado Power Butty

Ingredients:

  • 2 slices of grain and seeded bread
  • 1 small piece of salmon, thinly sliced
  • A little plain flour, seasoned with salt and pepper
  • 1 ripe avocado
  • Juice of half a lemon or lime
  • ¼ green pepper, finely diced
  • 2–3 spoonfuls of plain yogurt
  • Fresh basil and chives, chopped
  • Salt and pepper to taste

Method:

  1. Lightly coat the salmon in the seasoned flour and pan-fry in a small amount of oil until golden and cooked through.
  2. In a bowl, mash the avocado and mix in the green pepper, yogurt, lemon or lime juice, and herbs. Season to taste.
  3. Spread the avocado mixture generously onto one slice of bread, then place the cooked salmon on top.
  4. Add the second slice of bread, press gently, and cut in half.
  5. Serve and enjoy!
