Who says soup is only for winter? This chilled Gazpacho is a hydration powerhouse, loaded with water-rich tomatoes, cucumbers, and peppers. It’s light, refreshing, and packed with vitamins, making it a perfect meal or snack for the Hydration Challenge. Each spoonful is like a sip of summer to brighten your January days.
3 large red ripe tomatoes
1 red pepper
I cucumber
1/4 cup of olive oil or oil of choice
A good splash of red wine vinegar
Salt and pepper
Cut the tomatoes into wedges. Cut the red pepper into chunks. Peel the cucumber and take out the seeds using a teaspoon to scrape them out, then cut into chunks. Place them into a bowl along with the olive oil, vinegar, salt and pepper and leave to ‘marinate’ for a minimum of one hour. Whizz everything in a blender for at least a minute and pour into a jug to chill in the fridge.
This will last 2-3 days in the fridge but always better to eat on the actual day.
