
Baked Salmon and Fresh Potato Bites
These Baked Salmon and Potato Fresh Herb Bites are a flavourful and nourishing option for any meal. The rich taste of salmon pairs beautifully with the fresh herbs and creamy potato, creating a bite-sized delight that’s perfect for an appetiser or light lunch.

Ingredients
- 200g potatoes
- 150g cooked salmon fillet
- 2 hard boiled eggs – grated
- A small handful of freshly chopped herbs of choice. Dill, parsley, chives, basil go well with this
- A squeeze of fresh lemon juice
- A small plate of fresh breadcrumbs
Cook the potatoes in the microwave or boil. Mash until smooth.
Add the cooked Salmon flakes, the 2 grated boiled eggs, lemon juice, fresh herbs, and seasoning.
If you wanted to ´jazz up´ the mixture, a little horseradish and tabasco could be added or anything that takes your fancy.
The mixture should be such that you can now make little patties and place them in the breadcrumbs to coat. Use a heaped teaspoon to guide you so they are roughly all the same size.
Place the patties on a lined baking tray and bake until golden for about 15-20 minutes on mark 180.
This would be nice with a little Greek Yoghurt, freshly snipped chives, some chopped capers and gherkins rather like a tartare sauce.
