I love a “fluffy” egg for breakfast its quick and easy in the microwave. Put a little oil or melt knob of butter in a mug, add an egg, splash of milk, salt and pepper. You can make any additions to it from anything lurking in the fridge, you don’t need much… a pinch of grated cheese, chopped spring onion, herbs etc beat with a fork and cook in microwave for 45-60 seconds depending on the microwave, Its great served in the mug, or with a toasted wholemeal muffin…yum!
