Healthy Flapjacks
Ingredients
- 200g Oats
- 150g chopped dates, raisins or any dried fruit
- 40g desiccated coconut
- zest and juice of half lemon
- 1 apple grated
- 2 tbsp maple syrup or honey
- 100g butter or low fat spread, sunflower oil or coconut oil (or mix 60g butter, 40g oil)
- Method
- 1. Preheat oven to 180 degrees fan/200C/gas mark 6
- 2. Grease a 20cm square cake tin and line with baking paper
- 3. Place oats, dates/raisins, coconut, lemon, apple into food processor or blender and pulse until broken down or combined. This can also be done by hand.
- 4. Place honey/syrup and butter/oil into saucepan or microwave and heat until melted.
- 5. Add all ingredients together and make sure oat mixture is coated
- 6. Pour into tin and flatten with spatula, [pressing into corners
- 7. Bake for 15-20minutes
- 8. Remove and cut into slices and allow to cool before removing
Tip โ fruit could be soaked in hot water for 10 minutes and drained . I add peanut and /or seeds for extra health benefits
