Parcel baked fish 

Serves 1 

Ingredients

  • White fish fillet; cod or plaice. 
  • Handful of spinach
  • 1 onion, finely sliced into rings
  • 4 asparagus spears 
  • 1 sliced tomato
  • 1 chopped red chilli
  • Chopped parsley
  • 1 tbsp rapeseed oil
  • Splash of lemon juice
  • Peas
  • Mange tout 

Method

  • 1. In a baking dish lay foil to put on the fish, spinach leaves, onion, asparagus, tomato, chilli and parsley. Season, drizzle with oil and lemon juice.
    2. Pull foil around the contents but do not over the top and bake in a medium oven until juices run clear. 
  • 3. Serve with steamed veg.
