This is a lovely fresh dip to have in the fridge to eat with raw vegetables, crackers, or bread. There are lots of ways you can present this dip. It looks very pretty and tastes great. Other ideas are to sprinkle over some sesame seeds, pumpkin seeds, chopped almonds โ the ideas are endless! Try this version to get the ideas flowing.
- 1 tub of ricotta or cottage cheese
- A few olives, chopped or sliced
- A small chopped fresh chili
- A little chopped cucumber
- A little red pepper, chopped
- A handful of fresh herbs, finely chopped
- A little grated lemon rind and squeeze of juice
- Salt and pepper to taste
