Salmon with lemon, parsley & tarragon.
Serves 2
Ingredients
- 2 thick salmon steaks
- Grated rind of lemon and juice of 1 lemon
- 2 tsp. rapeseed oil
- 2 tbsp. chopped parsley and tarragon
- Pepper
- Large green salad
Method
- 1. Brush salmon on both sides with a little lemon juice and cook gently under the grill, 3-4 mins each side.
- 2. Heat the oil with remaining lemon juice then add chopped herbs and the cooking juices from the grill tray. Season with pepper. Mix thoroughly and serve the salmon with the herby oil mixture drizzled over the green salad.
